Primære forskningsområder

Lektor i fødevarekemi med flest aktiviteter indenfor mejerikemi, især analyser af mælkeproteiner og peptider derfra ved hjælp af kapillar-elektroforese, HPLC ang LC-MS(MS).

  • Enzymatisk modifikation og hydrolyse af mælkeproteinerfor for at forbedre de funktionelle egenskaber, f.eks gelering og skumning. 
  • Fremstilling af bioaktive peptider fra proteiner fra fødevarer og bi-produkter (f.eks ACE-inhiberende, antioxidative og anti-inflammatorisk egenskaber).
  • Analyse af mælkeproteiner og identifikation af peptider (CZE, RP-HPLC, LC-MS og LC-MS / MS)
  • Analyse af lavmolekylære komponenter i kødprodukter (HILIC-MS/MS)
  • Bioaktive peptider til at hjælpe med at bekæmpe livsstilssygdomme

Presently working with differences between the genetic variants of β-casein, A1 and A2, and participating in the following two research projects:

Characterization of biochemical and nutritional properties of protein hydrolysates of side streams from the slaughter industry (2017-21)

Non-thermal processing of milk: Effects on macromolecules and consequences for functionality, (2017-20).

Undervisnings- og vejledningsområder

  • Ansvarlig for laboratorieøvelserne i bachelorkurset Fødevarekemi 
  • Ansvarlig for masterkurset Food Enzymes and Applications 
  • Underviser en lille del på masterkurset  Dairy product Technology 2
  • Koordinator på PhD kurset Food Proteins: Significance, Reactions and Modifications (som udbydes ca hvert andet år i samarbejde med Wageningen Universitet)
