SyFy Wire: X-rays probe food at a molecular level to make future snacks even more tasty

The American news and cable channel Syfy Wire has written an article about a new X-ray facility at the Department of Food Science at the University of Copenhagen (UCPH FOOD) that can be used to look at food at the molecular level. Professor Lilia Ahrné and Associate Professor Jacob Kirkensgaard are quoted in the article.

“We’re interested in better understanding the structure of foods, particularly plant-based foods. This technique is interesting because you get better information about the structure of food which is strongly related with texture properties,” Ahrné told SYFY WIRE.
