3 new episodes of the TV-series: The young researchers and the food
UCPH FOOD has produced 3 new episodes of the TV-series The young researchers and the food, which is shown in collaboration with TV2 Lorry. The series follows young food science students / researchers who are involved in various research projects at the Department of Food Science at the University of Copenhagen (UCPH FOOD).

The new episodes:
Emilie Nyborg Nielsen is a ph.d. student at the Department of Food Science at the University of Copenhagen. Her research deals with how to utilize the side streams that come from the production of e.g. yoghurt, ymer, and skyr.
Rasmus wants to improve breast milk substitutes (5:6)
Rasmus Riemer Jakobsen is a ph.d. student at the Department of Food Science at the University of Copenhagen. He works towards making breast milk substitutes just as good as actual breast milk. What kind of proteins and bacteria do substitutes lack to be able to match the real deal?
Charlotte makes delicious squid (6:6)
Charlotte Vinther Schmidt is a postdoc at the Department of Food Science at the University of Copenhagen who researches the preparation of squids. What is the most humane method of slaughtering squids, and how should its meat be prepared in order to get the best result?
