Microbiologist with a focus on dairy employed at the University of Copenhagen

Microbiologist Josue Castro has been employed as a Tenure Track assistant professor in dairy microbiology and plant-based products at the Department of Food Science at the University of Copenhagen (UCPH FOOD)from 1 April 2022.

Josue Castro's vision is to provide added value, innovation and sustainability to the dairy industry through an in-depth understanding of the microbiological processes in the raw materials, utilization of the latest technologies as well as interdisciplinary strategies and collaborations. He replaces Associate Professor Finn Vogensen, who will retire at the end of September 2022.

Josue Castro has extensive experience in characterizing complex microbial groups of fermented foods (e.g. starter cultures), microbial metabolism, as well as the use of multivariate data analysis. He knows the industry's production processes, and has a goal of supporting collaboration and synergy between business and university.

The surroundings at UCPH FOOD are familiar to Josue Castro, who has been associated with the department for a number of years and already teaches several bachelor's, master's and industry courses in microbiology and microbiomes in fermented foods. With the new position comes responsibility for the course "Dairy Microbiology".

Josue Castro, who is from Honduras and speaks fluent Danish, is looking forward to the new tasks and collaborations and is in the process of planning a number of dairy visits.
