Food Proteomics Platform

Description

The food proteomics platform consists of three LC-MS systems, allowing for the separation, identification and quantification of different compounds, as well as to  to separate, identify, and quantify compounds, and to elucidate the structure and chemical properties of molecules. The food proteomics platform enables:

  • Determination of protein composition of food matrix
  • High resolution identification of protein modification such as oxidation, glycation and phosphorylation
  • Characterization of protein degradation and cross-linking during food processing
  • Protein-protein interaction
  • High throughput quantification of amino acid modification
  • Peptide quantification

Options and requirements for use

The analysis of samples is made in collaboration with a superuser of the Food Proteomics Platform.
Interpretation and analysis of the results are not included in the fee.

At the start of a collaboration on research with the University of Copenhagen, a cooperation agreement must be drawn up. There are different types of agreements depending on the nature of the cooperation. See more here: collaboration.ku.dk/cooperation-agreements/
