Brewery

Description

The brewery can facilitate all parts of the brewing process of beer, as well as additional analyses of wort and beer. 

  • Beer will be brewed and fermented by KU FOOD personnel as specified in the collaboration agreement.
  • Beer will be delivered in 33 cl glass bottles or single-use plastic kegs.

The equipment in the brewery includes:

  • 2-Roller malt mill (Maltman 75)
  • Four kettle pilot brewhouse (Kaspar Schulz) – cast out wort volume 50-100 litre, incl.
    • Temperature controlled mash kettle
    • Lauter tun
    • Wort kettle with external boiler and hop dosing vessel
    • Whirlpool
    • Wort cooler and aeration device
  • Temperature controlled fermentation tanks: 30 litre, 40 litre, 60 litre and (Kaspar Schulz + Speidel)
  • Low-oxygen counterpressure bottle filling and crown cork closure  (Braumanufaktur Werk)
  • Laboratory Mashing Apparatus with 8 * 200 ml mash beakers (Lochner)

 

 

Options and requirements for use

 

  • UCPH FOOD can offer the following additional analyses of wort and beer:
    • Microscopic examination of yeast (e.g. counting)
    • Microscopic examination of bacterial contamination (e.g. flow cytometry)
    • Precise extract in wort (by Anton Parr density meter)
    • Alcohol and small sugars (by HPLC)
    • pH
    • Color
    • FAN
    • Turbidity
    • Oxidative stability evaluated by electron spin resonance spectroscopy (ESR)
    • GC-MS analysis of volatiles

 

A collaboration agreement must be made and signed before the pilot brewing can start up. The collaboration agreement will among other things cover

  • Details of specific brews and related analyses to be carried out
  • IPR and confidentiality
  • Type of collaboration (e.g. is it requested research or a research project?)
  • Deliverables by the partners
  • Time schedules
  • Budget and price

For requested research an overhead of 180% of salaries will be added, while it will be lower for projects with shared IPR.
