I work as a PhD student at the Biochemistry and Bioprocessing section, Department of Food Science, University of Copenhagen.

In my current research I am concentrating on the analytical biochemical characterization of proteins and fibres to provide and develop new insight into the underlying molecular mechanisms responsible for the behaviour of food proteins and fibres of plant origin (mainly rape seed). The knowledge obtained will support the collaboration with industry by providing the outlines for future new food products derived from plant material.

The PhD study is part of the HITFOOD project ( and supervised by Jens Chr. Sørensen, Karsten Olsen and Keld Ejdrup Markedal.
