I work as an industrial postdoc at the Department of Food Science (Section for Dairy, Meat and Plant Product Technology) in collaboration with the company Fan Milk International.

My research is related to plant product technology especially based on legumes due to their high protein content. The character of my research is highly interdisciplinary, with the use of spectroscopic and chemometric techniques for the characterization of raw materials over pre-processing techniques (fermentation, germination, enzyme technology) for improved protein quality (e.g. digestibility) to extrusion technology for product development for specific consumer groups with special nutritional needs, such as protein limited populations. I also work with texture and aroma analysis as well as storage stability of both raw and final products.

  • Functionality (e.g. texture analysis)
  • Aroma analysis and storage stability (GC-MS)
  • Spectroscopy (IR, NIR, Raman, NMR and hyperspectral imaging)
  • Chemometrics / multivariate data analysis
