I am a PhD student at the Department of Food Science in the Food Chemistry section. The topic of my research project is "Coatings for individual & self-assembled probiotics". The project aims to develop a novel delivery system based on biopolymers in order to ensure the viability of probiotics in gastrointestinal transit and their controlled release in the intestine. The coatings are produced with layer by layer method. The project also focuses on developing a tool in order to facilitate hierarchical self-assembling of bacteria.
In the long term, my future objective is to be involved in formulation methodologies to the design and optimization of sustainable food processing routes and to the development of innovative and competitive products by considering their environmental footprints and use of sustainable & renewable resources with the aim of improving human health and wellbeing of society.
