  • Microbial behavior in complex environments.
  • The association between the mammalian gut microbiome (GM), health and disease and how GM is influenced by diet, pre- and probiotics (in vivo and in vitro).
  • Microbial physiology.
  • Fermented Foods.
  • Rapid methods for culture-dependent and culture-independent (qPCR, high throughput sequencing) characterisation of complex microbiological communities.
  • Coupling of bioinformatic and chemical/spectroscopic data using multivariate data analysis.
  • Single cell microbiolgy.
  • Cell-Cell interactions.
  • Cocoa, coffee and indigenous fermented foods.


  • Responsible for the course ”Basal Cell and Molecular Biology” (BSc-level)
  • Co-responsible for the courses ’’Cool Climate Viticulture and Enology” og ”Applied ’Cool Climate Viticulture and Enology” (MSc-level).
  • Lecturer on several icrobiology B.Sc., M.Sc. and Ph.D. courses.
  • Supervisor and co-supervisor on numerous B.Sc. and M.Sc. projects. Main supervisor of 8 PhD-students (3 completed), 2 scientific assistants and 3 Post Docs. Co-supervisor of a good handful more. Member of PhD evaluation committees (10 in total, 5 as chairman) in Denmark, Sweden and Belgium.
