Primary fields of research

My PhD research is within the field of food physics and my main focus is to elucidate molecular interactions between specific plant proteins and milk proteins and how these interactions can be used to control the functionality of complex food matrices. My PhD study is part of an interdisciplinary research project called HAPFAM - Healthy and Affordable Protein rich Foods for African Markets (
